Anda Masala – Quick 10-Minute Breakfast Recipe
Anda masala is a delicious and flavorful Indian-style egg dish that makes a perfect quick breakfast. Made with boiled eggs, onions, aromatic spices, curd, and fresh herbs, this recipe is simple, satisfying, and packed with protein.
Ingredients
- 8 boiled eggs, cut into slices
- 1 tsp cumin seeds
- 2 medium onions, finely chopped
- 2 tsp ginger-garlic paste
- ¼ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp black pepper powder
- ½ tsp cumin powder
- 1 tsp coriander powder
- ½ tsp garam masala
- 1 tsp salt, or to taste
- 3 tbsp curd (yogurt)
- 1 spoonful of cooking oil
- Green chili, chopped, for garnish
- Fresh coriander, chopped, for garnish
Method
Heat the oil: Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Cook the onions: Add the chopped onions and sauté until they become soft and lightly golden.
Add ginger-garlic: Stir in the ginger-garlic paste and cook for about 30–60 seconds until fragrant.
Add spices: Add turmeric, red chili powder, black pepper, cumin powder, coriander powder, and salt. Mix well.
Add curd: Lower the heat and add the curd. Stir continuously so the yogurt blends smoothly with the spices. Cook for 1–2 minutes.
Add eggs: Gently place the sliced boiled eggs into the masala. Carefully mix or spoon the masala over the eggs so they remain intact.
Finish with garam masala: Sprinkle garam masala over the eggs and cook for another minute.
Garnish and serve: Top with chopped green chili and fresh coriander. Serve hot with roti, paratha, toast, or naan.
Quick Tip
For the best flavor, use freshly boiled eggs and cook the onion masala until lightly golden before adding the spices. Add the curd on low heat to help prevent it from splitting.
